The short answer
The Gianyar night market (Pasar Senggol Gianyar) is in Gianyar town, about 13 km and 25–35 minutes east of Ubud. Food stalls run in the evening until about 11pm; arrive around 6pm. Order babi guling from a stall with a freshly carved pig, then sate lilit, lawar, and a sweet like klepon. Bring small cash.

Where and when
The Gianyar night market, Pasar Senggol Gianyar, is in Gianyar town, about 13 km east of central Ubud. Expect 25 to 35 minutes by car or scooter. It has moved within town before and now sits by the GOR Kebo Iwa sports hall, northwest of the town square, so search the name in your map app rather than an old street address.
The food stalls run in the evening until about 11pm. Arrive around 6pm for the full choice; it is busiest from 7pm to 9pm and fullest on weekends.
What to order
Babi guling is the reason most people come: spit-roasted pork with crackling, spiced stuffing, rice, and usually a spoon of lawar. Pick a stall with a freshly carved pig on the counter. Then sate lilit, minced and pressed onto sticks, and a sweet like klepon or laklak from the cake stalls.
Bring small cash notes. Point, ask the price, and eat standing or at the shared tables.
